Pasta O Pasta

This quick and easy vegan pasta dish was a special request. Hope all who watch and make it, enjoy it as much as we did. Here's to comfort food pasta!

Ingredients
- 250 grams or ½ lb dry penne pasta
- 1 tablespoon olive oil
- red chilli flakes to taste
- 1 teaspoon salt
- 8 ounces of diced tofu cutlets
- 1/2 cup fresh basil leaves
- 1/3 cup fresh parsley
- 4 large diced red tomatoes
- 1 cup chopped green cabbage
- 1 diced green bell pepper
- 4 cups chopped spinach leaves
- 1 teaspoon dried oregano
Directions
- In a large pan, heat 2 litres of water, add olive oil and salt.
- Cook pasta for 20 mins. Drain and reserve 1 cup of pasta liquid.
- In a thick bottom pan heat oil, add red chilli flakes, cabbage, green bell pepper, diced tofu, tomatoes.
- Sauté for a few minutes and finally add oregano, salt, parsley, cover pan and cook for 5 to 8 mins.
- Add spinach and let it wilt. Add pasta, basil and the reserve liquid.
- Cook for a further two mins. Serve hot or cold.
