Coconut Lime Cake with Passion Fruit Glaze

Flavor of coconut with a fresh hint of lime topped by a passion fruit glaze. My most divine creation yet. Folks who have eaten this cake commented that it was better than chocolate cake!

Ingredients

  1. ½ cup dried coconut toasted lightly
  2. 1 ½ cup all-purpose flour
  3. 1 lime zest and juice
  4. ½ teaspoon baking soda
  5. 1 teaspoon baking powder
  6. ¼ teaspoon salt
  7. 1/3 cup coconut oil
  8. 1 cup coconut sugar (you can use regular or raw sugar)
  9. 1 cup coconut milk

Directions

  1. In a bowl add the coconut oil and the sugar and mix.
  2. Add 1 cup coconut milk, the lime zest and mix.
  3. Add the lime juice into it (should be about 1-2 tbsp).
  4. Sieve all the dry ingredients into this wet mixture (flour, soda, baking powder, salt).
  5. Mix well until there are no lumps, mix in the dried coconut.
  6. Take an 8 X 8 inch baking pan, lightly oil the pan and line with parchment paper.
  7. Preheat the oven to 350F/180C.
  8. Empty the cake mixture into the pan and shake the pan until the mixture is evenly distributed.
  9. Bake at 350F for about 35-40 minutes.
  10. Check the cake is cooked by inserting a toothpick into the middle, this should come out clean.
  11. When the cake is cooled transfer to a wire rack.
