Coconut Lime Cake with Passion Fruit Glaze

Flavor of coconut with a fresh hint of lime topped by a passion fruit glaze. My most divine creation yet. Folks who have eaten this cake commented that it was better than chocolate cake!

Ingredients
- ½ cup dried coconut toasted lightly
- 1 ½ cup all-purpose flour
- 1 lime zest and juice
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1/3 cup coconut oil
- 1 cup coconut sugar (you can use regular or raw sugar)
- 1 cup coconut milk
Directions
- In a bowl add the coconut oil and the sugar and mix.
- Add 1 cup coconut milk, the lime zest and mix.
- Add the lime juice into it (should be about 1-2 tbsp).
- Sieve all the dry ingredients into this wet mixture (flour, soda, baking powder, salt).
- Mix well until there are no lumps, mix in the dried coconut.
- Take an 8 X 8 inch baking pan, lightly oil the pan and line with parchment paper.
- Preheat the oven to 350F/180C.
- Empty the cake mixture into the pan and shake the pan until the mixture is evenly distributed.
- Bake at 350F for about 35-40 minutes.
- Check the cake is cooked by inserting a toothpick into the middle, this should come out clean.
- When the cake is cooled transfer to a wire rack.
