Chick Pea Patties

Maureen shows us an easy way to include protein in our vegetarian diet with simple chick pea patties.

Ingredients
- 1 lb or 29 oz can chickpeas (cooked)
- 1 tablespoon ground cumin seeds
- 1 tablespoon dried coriander powder
- 1 tablespoon chilli powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon chopped fresh coriander leaves
- 1 tablespoon chopped curly parsley
- 2 tablespoon all-purpose flour
Directions
- Place chickpeas, olive oil in a food processor. Pulsate or grind until thick paste. Add ground spices and the rest of the ingredients. Lastly bind it with the all-purpose flour
- Rest mixture for 15 minutes
- Divide the mixture in 12 golf size balls and flatten them into small patties
- Shallow fry in a wide frying pan in small batches until golden brown
