Quesadilla

A true "veggie" quesadilla. Packed with a variety of vegetables and beans.

Ingredients
For the subzi
- 1 cup tomatoes
- 1 cup corn
- 1 cup zucchini
- 1 cup carrots
- 1 cup yellow squash
- 1 cup red pepper
- 1 cup yellow pepper
- 1 cup green pepper
For the beans
- 1 can large kidney beans
- ½ cup mixed peppers, green, red, yellow
- ½ cup tomato sauce
- 1 teaspoon oregano
- 2 teaspoon olive oil
- Salt and pepper
- Cheese
- Flour tortillas
Directions
For the beans
- In a pan add the olive oil, oregano and black pepper
- Then add the mixed peppers
- Add the tomato sauce and a pinch of salt
- Add the can of kidney beans
- Mix thoroughly for 5 minutes, remove from heat
For the subzi
- In a pan add the olive oil, oregano and black pepper
- Add the green peppers, red peppers and yellow peppers, yellow squash, corn, carrots and zucchini
- Add 1 tsp salt
- Cover for 10 minutes
- After 10 minutes add the tomatoes and leave until the water is all evaporated
- Take a tortilla and spread the bean mixture on it
- Then take some of the vegetable subzi and spread on the tortilla
- Sprinkle some cheese over it
- Cover with another tortilla
- Spread a little butter on both sides
- Place in a press for two minutes
- Eat with sour cream, salsa or guacamole
